FISH KERABS WITH BANANA SOUCE
Ingredients
Ingredients:
750 g white fish fillets cut into 5 cm cubes
1 tablespoon peanut oil
BANANA SAUCE
20 g polyunsaturated margarine
3 tablespoons brown sugar
3/4 cup (190 ml) evaporated skim milk
3/4 cup (185 g) low fat unflavoured yoghurt
4 medium bananas, sliced
2 tablespoons chopped nuts, toasted
Instructions
Serves 6
How to cook:
1. Thread fish onto twelve oiled wooden skewers. Brush with oil and grill or barbecue for 3-4 minutes each side.
2. To make sauce, melt margarine in a fry pan. Remove pan from heat.
3. Dissolve brown sugar in evaporated milk. Stir evaporated milk mixture and yoghurt into melted margarine. Add bananas and nuts and cook gently over low heat for 1-2 minutes.
4. Arrange kebabs on a serving plate, spoon over sauce and serve immediately.
