BEANS IN TOMATO SAUCE

Ingredients
1 onion, chopped 2 cloves garlic, crushed 440 g/14 oz canned tomatoes, undrained and mashed 2 tablespoons chopped fresh flat leaf parsley 1 tablespoon chopped fresh mint 375 g/12 oz green beans, trimmed freshly ground black pepper

Instructions

Heat a nonstick frying pan over a medium heat, add onion and garlic and cook for 4 minutes or until onion is soft and golden. Stir in tomatoes, parsley and mint, bring to simmering and simmer for 4 minutes. 2. Add beans and cook for 5 minutes or until beans are tender crisp. Season to taste with pepper. Serves 4
