ATHENIAN LAMB KEBABS
Ingredients
Ingredients:
750 g lean lamb, cubed and trimmed of fat
12 bay leaves
1 large onion, cut into eighths
12 cherry tomatoes
1 green capsicum, cubed
MARINADE
1 tablespoon olive oil
3 tablespoons lemon juice
1 teaspoon finely chopped fresh rosemary
3 tablespoons finely chopped fresh parsley
Fresh ground black pepper
Dash Tabasco sauce
Instructions
Our Mediterranean-flavoured kebabs will quickly become a family favourite.
How to prepare:
1. To make marinade, combine oil, lemon juice, rosemary, parsley, pepper to taste and Tabasco sauce in a glass bowl. Add meat, toss to coat and marinate for 30 minutes.
2. Remove meat from marinade and thread on to twelve oiled wooden skewers, alternating with bay leaves, onion, tomatoes and capsicum.
3. Barbecue or grill kebabs slowly, turning and basting frequently with remaining marinade, until well browned and cooked.
