Instructions
Butterfly beef steaks with their lean meaty quality, are excellent with this tasty sauce. How to prepare: 1. Trim all visible fat from meat. To make marinade, combine orange juice, orange rind, cloves and cranberry sauce in a glass bowl. Add meat and marinate for 1-2 hours. 2. Remove steaks from marinade and coat with peppercorns. Heat oil in a non stick fry pan. Cook steaks for 4-5 minutes each side or until cooked. Set aside and keep warm. 3. Strain remaining marinade and pour into a saucepan. It seems that the colour of cooked meat has no bearing on its fat and cholesterol content. Some of the leanest meats such as venison, buffalo and kangaroo are deep red in colour and their very lack of fat has made them more difficult to cook without becoming tough!
