CHEESY APPLE MUFFINS

Ingredients
Ingredients: 1 ¼ cups (165 g) whole meal self raising flour ¼ teaspoon ground cinnamon ¼ teaspoon ground nutmeg ¼ teaspoon ground ginger ¼ teaspoon ground cloves ¾ cup (190 mL) apple juice 1 teaspoon baking powder 1 cup (45 g) oat bran 3 tablespoons brown sugar 1 green apple, peeled and grated 2 tablespoons polyunsaturated oil 125 g ricotta cheese

Instructions
Mixing procedure: 1. Sift flour, cinnamon, nutmeg, ginger, cloves and baking powder into a mixing bowl. Add oat bran and sugar. 2. Make a well in the centre of the flour mixture. Stir in apple, ricotta, oil and apple juice. Mix until just combined. Spoon mixture into lightly greased muffin pans.
