HOT PASTA AND MUSHROOMS
Ingredients
Ingredients:
2 cups (300 g) macaroni
3 tablespoons finely chopped fresh parsley
2 tablespoons grated Parmesan cheese
MUSHROOM SAUCE
2 teaspoons polyunsaturated oil 0 1 onion, sliced
500 g mushrooms, sliced
1 teaspoon paprika
2 tablespoons tomato paste (no added salt)
1 cup (250 mL) evaporated skim milk
Freshly ground black pepper
Instructions
Creamy mushroom sauce and hot pasta. the food that dreams are made of! A greel salad and crusty bread will complete your meal.
How to prepare:
1. Cook macaroni in boiling water in large saucepan following packet directions Drain, set aside and keep warm.
2. To make sauce, heat oil in a non-stick fry pan. Cook onion and mushrooms until they soften. Blend together paprika, tomato paste and milk. Stir into mushroom mixture and cook gently over low heat for 5 minutes Season to taste with pepper.
3. Place pasta in a heated serving dish and spoon over sauce. Toss gently to combine. Sprinkle with parsley and Parmesan to serve.
