CHICKEN AND COUSCOUS SALAD

Ingredients
1 cup/185 gj6 oz couscous 1/2 cup/125 mL/4 f1 oz boiling water 1/2 cup/125 mL/4 f1 oz boiling chicken stock 1 cos lettuce, leaves separated 250 gj8 oz cooked chicken breast fillets, cut into thick slices 2 tomatoes, chopped 1 cucumber, chopped tablespoons fresh coriander leaves 60 gj2 oz snow pea (mangetout) sprouts or watercress YOGURT DRESSING 2 tablespoons chopped fresh mint 1 teaspoon ground cumin 1/2 teaspoon chili powder 1 cup/200 gj61/2 oz low-fat yogurt

Instructions
1076 kilojoules 256 Calories per serve High Fibre Low Fat 2 serves carbohydrate 1. Place couscous in a bowl, pour over boiling water and stock, cover and stand for 5 minutes or until water is absorbed. Toss with a fork to separate grains. 2. Arrange lettuce, couscous, chicken, tomatoes, cucumber, coriander and snow pea (mangetout) sprouts or watercress on a serving platter. 3. To make dressing, place mint, cumin, chili powder and yogurt in a bowl and whisk to combine. Drizzle a little dressing over salad and serve remaining dressing separately. Serves 4
