BEETROOT, ORANGE AND HORSERADISH SALAD

Ingredients
Ingredients: 4 medium cooked beetroot, peeled and cut into thin strips 2 teaspoons grated orange rind 2 oranges, segmented HORSERADISH DRESSING 1 ½ tablespoons olive oil 3 tablespoons cider vinegar 1 teaspoon mustard powder 2 teaspoons horseradish relish 2 teaspoons sugar

Instructions
How to prepare: 1. Combine beetroot, orange rind and orange segments. Arrange attractively in a salad bowl. Cover and refrigerate for 1-2 hours. 2. To make dressing, combine oil, vinegar, mustard, horseradish and sugar in a screw top jar. Shake well to combine.
