APPLE, STRAWBERRY AND PECAN SALAD

Ingredients: 2 red apples, chopped 2 stalks celery, sliced 200 g strawberries, halved 3 tablespoons sultanas 60 g chopped pecans DRESSING 2 teaspoons finely chopped fresh mint leaves 3 tablespoons low fat unflavoured yoghurt 2 tablespoons lemon juice

Instructions
A variation on the traditional Waldorf salad, with half the fat and no cholesterol. How to prepare: 1. Combine apples, celery, strawberries, sultanas and pecans in a bowl. 2. To make dressing, blend together mint, yoghurt and lemon juice.
