HERBY VEGETABLE SALAD

Ingredients
Ingredients: ΒΌ cauliflower, broken into florets 1 head broccoli, broken into florets 1 large carrot, cut into thin strips 150 g snow peas, trimmed 1 red capsicum, cut into thin strips 3 tablespoons lemon juice 2 teaspoons finely chopped fresh coriander 2 teaspoons finely chopped fresh rosemary Freshly ground black pepper LEMON VINAIGRETTE 2 tablespoons lemon juice 1 tablespoon olive oil 1 clove garlic, crushed 1 teaspoon wholegrain mustard

Instructions
1. Boil, steam or microwave cauliflower, broccoli, carrot and snow peas until just tender. Drain, refresh under cold water. 2. Drain vegetables well. Toss in a salad bowl with capsicum, lemon juice, coriander and rosemary. Season to taste with pepper. Refrigerate until required. 3. To make vinaigrette, combine all ingredients in a screw top jar.
