Ingredients: 1 ½ cups (180 g) self-raising flour 1 tablespoon cocoa ¾ cup (190 g) sugar 1 tablespoon golden syrup 100 g polyunsaturated margarine, melted 1/2 cup (125 mL) buttermilk, warmed 1/2 cup (125 mL) skim milk, warmed ICING 60 g reduced fat spread (salt reduced), softened 3-4 tablespoons skim milk 3 cups icing sugar 2 tablespoons cocoa

Instructions
Surprise your cholesterol watchers with this chocolate cake. How to prepare: 1. Sift together flour and cocoa into a bowl. Add sugar. Combine golden syrup, margarine, buttermilk and skim milk. Stir into dry ingredients and mix well to combine. 2. Spoon cake into a lightly greased and lined 18 cm round cake pan. Bake- at 180°C for 30 minutes. Remove and allow to cool. 3. To make icing, combine spread and milk. Mix in icing sugar and cocoa. Beat for 5 minutes or until mixture is lightly and fluffy.
