BEANS CON CARNE

3 tablespoons water
2 onions, chopped
2 cloves garlic, crushed
I red capsicum (pepper), chopped
2 x 440g/ 14 oz canned red kidney beans, drained
2 carrots, diced
250 g / 8 oz green beans cut into 2.5cm/1 in pieces
2 x 440g/14 oz canned tomatoes, undrained and mashed
I cup/250mL / 8 fl oz tomato juice
1/4 teaspoon chili powder, or according to taste
4 tablespoons chopped fresh parsley
Instructions
Method:
1. Heat water in a saucepan, odd onion and garlic and cook, stirring, for 3-4 minutes or until onion is soft.
2. Add red capsicum (pepper), red kidney beans, carrots, green beans, tomatoes, tomato juice and chili powder and bring to the boil. Reduce heat and simmer, stirring occasionally, for 15-20 minutes or until mixture reduces and thickens. Stir in parsley and serve.
Note: For a complete meal, accompany with rice, pasta or crusty bread and a tossed green salad.
