MARINATED TOFU SALAD

Ingredients
Ingredients 4 tablespoons soy sauce 2 teaspoons vegetable oil ½ teaspoon finely chopped fresh ginger 1 tablespoon lemon juice 2 teaspoons dry white wine 500g/1 lb tofu, cut into cubes 1 lettuce, leaves separated 2 tomatoes, cut into wedges 60g/2oz snow pea (mangetout) sprouts or watercress 2 carrots, sliced 1 tablespoon sesame seeds, toasted

Instructions
Method: 1. Place soy sauce, oil, ginger, lemon juice and wine in a small bowl. Add tofu and toss to coat. Cover and set aside to marinate for 10-/5 minutes. 2. Place lettuce, tomatoes, snow pea (mangetout) sprouts or watercress and carrots in a bowl. Drain tofu and reserve marinade. Add tofu to salad, toss to combine and sprinkle with sesame seeds. Just prior to serving, drizzle with reserved marinade. Note: An easy summer meal, this saad requires only wholegrain or rye bread to make it a complete meal. Serves 4
