MUSHROOM PIZZA
Ingredients
Ingredients:
375g/12 oz prepared puff pastry
60g/2oz grated Parmesan cheese
125g/4oz grated mozzarella cheese
1 onion, thinly sliced
200g/6 1/2 oz mushrooms, sliced
3 tomatoes, cut into I cm /l/2 . in slices
10 pitted black olives
2 teaspoons chopped fresh oregano or
1/2. teaspoon dried oregano
2 teaspoons chopped fresh thyme or
1/2 teaspoon dried thyme
Instructions
Method:
I. Roll out pastry to fit a greased 26x32cm / 10 ½ x 2 ¾ in Swiss roll tin.
2. Sprinkle pastry with Parmesan cheese and mozzarella cheese, then top with onion, mushrooms, tomatoes and olives. Sprinkle with oregano and thyme and bake for 30 minutes or until pastry is puffed and golden. Serve hot, warm or cold.
Note: This quick pastry-based pizza is great for weekend meals and leftovers are ideal for packed lunches.
