MUSHROOM SALAD

Ingredients
Ingredients: 500 g / 1 lb button mushrooms, thinly sliced 1 tablespoon finely chopped fresh chives 1 tablespoon finely chopped fresh parsley ½ red capsicum (pepper), diced Marinade 1/2 cup / 125 ml olive oil 3 tablespoons lemon juice 1 tablespoon white wine vinegar 1 clove garlic, crushed ¼ teaspoon chili powder

Instructions
Method: 1. Place mushrooms in a bowl. To make marinade, combine oil, lemon juice, vinegar, garlic and chili powder in a screw top jar. Shake well and pour over mushrooms. Toss and leave to marinate for 2-3 hours, tossing from time to time. 2. Gently fold through chives, parsley and capsicum and serve. Note: An all-time favorite, this mushroom salad is easy to make and delicious served as part of a salad buffet or with a barbecue. Serves 6
