ORIENTAL NOODLE SOUP
Ingredients
Ingredients:
4 cups/1 Iitre/1 ¾ pt vegetable stock
½ cup/125mL/4fl oz tamari
250 g/ 8 oz bean thread noodles
375 g/12 oz tofu, roughly chopped
155 g/ 5 oz bok choy, chopped
1 stalk fresh lemon grass, chopped, or
1 teaspoon dried lemon grass or
1 teaspoon finely grated lemon rind
3 spring onions, sliced diagonally
5 cm / 2 in piece fresh ginger, sliced
200 g / 6 ½ oz straw or button mushrooms
1 tablespoon chopped fresh mint
2 tablespoons chopped fresh coriander
100 g/3 ½ oz bean sprouts
Instructions
Method:
1. Place stock and tamari in a large saucepan and bring to the boil. Reduce heat, add noodles, tofu, bok choy, lemon grass or lemon rind, spring onions, ginger, mushrooms, mint and coriander and simmer for 20 minutes.
2. To serve, divide bean sprouts between four warmed serving bowls and ladle over hot soup.
Note: Tamari is also called tamari shoyu or Japanese soy sauce. Made only from natural products, soya beans and salt, it contains no monosodium glutamate (MSG) which is often found in Chinese soy sauce. It is also lighter in flavour.
