CUCUMBER AND YOGURT DIP

Ingredients
1 small cucumber, peeled, seeded and chopped salt
1 tablespoon chopped fresh mint
1 clove garlic, crushed
1 1/2 cups/300 g/91/2 oz low-fat natural yogurt
1 tablespoon lemon juice freshly ground black pepper

1. Place cucumber into a colander, sprinkle with salt and drain for 10 minutes. Rinse under cold running water and place on absorbent kitchen paper to drain.
2. Place cucumber, mint, garlic, yogurt, lemon juice and black pepper to taste in bowl and mix to combine.
Makes 2 cups / 500 ml / 16 fl oz
