EASY SALADS
Instructions
Many salads do not require a recipe if you have a few basic ingredients and an interesting dressing. Just remember to keep the kilojoules (calories) low by choosing a low- or no-fat dressing. There are a variety of commercial low-fat dressings available or make your own. Coleslaw is easily made by shredding cabbage and combining it with grated carrot, diced red or green pepper, diced celery and chopped fresh herbs, then tossing with a dressing of low-fat natural yogurt, wholegrain mustard and freshly ground black pepper.
Potato salad
When cooking the evening meal, cook extra potatoes, cool then store in the refrigerator. Make the salad by cutting the potatoes in pieces then tossing with a dressing of low-fat natural yogurt, chopped fresh herbs and freshly ground black pepper.
