HUMMUS

Ingredients
Ingredients 220g/70oz chickpeas, soaked for 4 hours in enough water to cover 125mL/ 4 f1 oz: tahina (sesame seed paste) 1/2 teaspoon salt 1/2 teaspoon freshly ground pepper 60mL/1f1 oz: lemon juice 3 gloves garlic, crushed Paprika 90g/3 oz ricotta cheese 3 tablespoons olive oil

Instructions
Method 1. Drain chickpeas and place into a large saucepan. Cover with fresh water, bring to the boil, and simmer for /-1'/4 hours or until tender. Drain, reserving 250mUBff oz of cooking water. 2. Puree chickpeas with the reserved cooking water, tahina, soft, pepper, lemon juice, garlic and ricotta until smooth 3. Spoon hummus onto a shallow plate, sprinkle with paprika drizzle with olive oil. Serve with pitta bread. Serves 6
