SPICY BUCKWHEAT NOODLES

Ingredients
Ingredients 500g/ 1 lb buckwheat noodles 1 tablespoon olive oil 3 cloves garlic, crushed 1 fresh red chillies, seeded and chopped 200 g / 6 ½ oz rocket leave removed and shredded 1 tomatoes, chopped

Instructions
Method 1. Cook noodles in boiling water in a large saucepan following packet directions. Drain, set aside and keep warm. 2. Heat oil in a frying pan. Add garlic and cook over a medium heat, stirring, for 1 minute. Add chillies, rocket and tomatoes and cook for 2 minutes longer or until rocket wilts. Toss vegetable mixture with noodles and serve immediately. Note: If rocket is unavailable you can use watercress instead. For a complete meal, accompany with a tossed green salad and whole meal bread rolls. Serves 4
