LEEK AND HAM SOUP

Ingredients
2 teaspoons vegetable oil 2 leeks, chopped 185g/6 oz green split peas 4 slices reduced salt and fat ham, chopped 2 bay leaves 3 cups/750 mL/11/4 pt beef stock 3 cups/750 mL/11/4 pt water 2 tablespoons chopped fresh parsley freshly ground black pepper

Instructions

Heat oil in a saucepan over a medium heat, add leeks and cook, stirring, for 7 minutes or until soft and golden. 2. Add peas, ham, bay leaves, stock and water, bring to boil, then reduce heat and simmer for 45-60 minutes or until peas dissolve into soup. Stir in parsley and black pepper to taste. Serve topped with Potato Croutons (see recipe below). Serves 4
