LIME LEAF STIR - FRIED GREENS
Ingredients
1 teaspoon sesame oil
3 spring onions, chopped
1 tablespoon shredded fresh ginger
4 kaffir lime leaves, shredded
2 teaspoons brown sugar
1/4 cup/60 mL/2 fl OZ oyster sauce
250 g/8 oz bok choy (Chinese leaves), chopped
155 g/5 oz snake (yard-long) or green beans, chopped
155 g/5 oz sugar snap peas

1. Heat sesame oil in a nonstick frying pan over a high heat, add spring onions and ginger and stir-fry for 1 minute. Stir in lime leaves, sugar and oyster sauce and stir-fry for 2 minutes.
2. Add bok choy (Chinese leaves), beans and peas to pan and stir-fry for 3-4 minutes or until vegetables are bright green and tender crisp. Serves 4
Kaffir lime leaves ore the leaves of the kaffir lime tree, a citrus tree native to SouthEast Asia. They ore available fresh or fresh frozen from Oriental food shops and little finely shredded lime rind can be used instead. For this recipe use fresh or fresh frozen leaves not dried.
