Place couscous in a heatproof bowl, pour over stock, cover and stand for 10 minutes or until liquid is absorbed. 2. Place a nonstick frying pan over a low heat, add couscous, tomatoes, mint and spring onions and cook, stirring, for 7 minutes or until heated through. Serves 4
