ORANGE SALAD

Ingredients
4 oranges 1/4 cup/60 g/2 oz sugar 1 cinnamon stick 3/4 cup/185 mL/6 fl oz water 1 teaspoon lemon juice 4 tablespoons reduced-fat honey-flavoured yogurt

Instructions
502 kilojoules 120 Calories per serve Medium Fibre Low Fat 2 serves carbohydrate 1. Thinly peel the rind from 1 orange. Ensure all the white pith is removed, cut rind into thin strips and set aside. Peel remaining oranges, remove all the white pith, and slice all oranges crossways into 1 cm 1 /2 in thick slices. Place in a heatproof bowl and set aside. 2 . Place reserved orange rind, sugar, cinnamon stick, water and lemon juice in saucepan over a medium heat, bring to simmering and simmer for 3 minutes. Remove from heat, cool slightly and pour over oranges. Cover and chill for at least 2 hours or until ready to serve. Serve with yogurt. Serves 4
