APPLE AND BLUEBERRY CRUMBLE

Ingredients
4 apples, cored and chopped 375 g/12 oz fresh or frozen blueberries 2 teaspoons finely grated lemon rind 1 teaspoon ground cinnamon CRUMBLE TOPPING 11/2 cups/140 g/41/2 oz rolled oats 1/2 cup/90 g/3 oz brown sugar 30 g/1 oz butter, softened 1/2 cup/125 mL/4 fl oz orange juice

Place apples, blueberries, lemon rind and cinnamon in an ovenproof dish and toss to combine. 2. To make topping, place rolled oats, sugar, butter and orange juice in a food processor and process briefly to combine. Sprinkle topping over fruit and bake for 35 minutes or until top is golden and fruit is soft. Serves 4 Serving suggestion: Accompany with low-fat honey yogurt.
