BAKED MARINATED FISH
Ingredients
HERBED SPICE MIX
4 spring onions, shredded 4 small whole fish (such as snapper, bream,
2 fresh green chilies, chopped whiting, sea perch, cod or cleaned and scaled
3 tablespoons shredded fresh basil 8 kaffir lime leaves
2 tablespoons chopped fresh coriander 8 thin slices lemon
1 tablespoon cumin seeds
4 tablespoons mango chutney
2 tablespoons reduced-salt soy sauce

1. Rinse fish under cold water and pat dry with absorbent kitchen paper. Place 2 lime leaves and 2 lemon slices in the cavity of each fish and place in a baking dish lined with nonstick baking paper.
2. To make spice mix, place spring onions, chilies, basil, coriander, cumin seeds, chutney and soy sauce in a bowl and mix to combine.
3. Spread spice mix over both sides of fish and bake for 30 minutes or until flesh flakes when tested with a fork. Serves 4
