CHEESY SPINACH PIZZA
Ingredients
8 spinach leaves, stalks removed and shredded
1/2 cup (20 g) unprocessed bran
3/4 cup (190 ml) water
2 tablespoons olive oil
1 3/4 cups (215, g) self-raising flour
pinch ground nutmeg freshly ground black pepper
TOPPING
4 tablespoons tomato paste (no added salt)
1 tablespoon fir1ely chopped fresh basil
100 g mozzarella cheese, grated 0 4 shallots, finely chopped
2 tomatoes, sliced
3 tablespoons grated Parmesan cheese
Instructions
If you didn't think you could have pizza on a low cholesterol diet, you're in for a surprise. Try ours. It's low in fat and cholesterol and high in fibre. Serves 8
1. Steam or microwave spinach until tender. Drain and set aside to cool.
2. Place bran and water in a mixing bowl. Stand 10 minutes, then stir in oil, flour, nutmeg, pepper to taste and one third of the cooked spinach.
3 Turn mixture out onto a lightly floured board and knead lightly. Press to fit a lightly greased 30 cm metal pizza tray.
4. To make topping, combine tomato paste with basil and spread over pizza base. Top with mozzarella, remaining spinach and shallots. Arrange tomato slices on top and sprinkle with Parmesan cheese.
Bake at 200°C for 30-35 minutes or until golden.
