HERB AND CHEESE LOAF

Ingredients
1 1/4 cups (170 g) self-raising whole meal flour 1 cup (90 g) rolled oats 1 cup (45 g) unprocessed bran 1/2 cup (60 g) grated low fat cheese 1 tablespoon grated Parmesan cheese 2 tablespoons chopped chives 2 tablespoons chopped fresh parsley 1 cup (250 ml) low fat milk 4 tablespoons safflower oil 3 egg whites

Instructions
This high fibre loaf is terrific served warm. Serves 12 1. In a bowl combine flour, rolled oats, ran, low fat and Parmesan cheeses, hives and parsley. Make a well in the center of the dry ingredients. Add milk and oil. Mix to combine. 2. Beat egg whites until stiff peaks form lightly fold through dough. 3. Spoon into a 23 cm x 12 cm non-stick loaf pan. Bake at 180°C for 40 minutes 678 kilo joules (161 calories) per serve Medium Fat 8.2 g Low Cholesterol 7 mg High Fibre 3.6 g Medium Sodium 202 mg
