Hard yellow cheeses have to be restricted or avoided on cholesterol lowering diets, due to their high content of saturated fat, cholesterol and salt. Cheddar, one of the most popular varieties, averages 33 % fat and is classified as high fat, together with Swiss, Parmesan, blue-vein, feta, Brie and cream cheese.
It is best to select low fat soft cheeses such as cottage cheese, ricotta and quark, or use small quantities of reduced fat versions of your favourite varieties. Many manufacturers now provide reduced fat Cheddar, Edam, Parmesan, mozzarella and other kinds.
