BANANA BREAD PUDDING

Ingredients
8 slices fruit bread, crusts trimmed 3 bananas, sliced 1/4 cup/60 g/2 OZ sugar, plus 2 tablespoons extra 1 teaspoon ground cinnamon 2 1/2 cups/600 mL/1 pt reduced-fat milk 3 eggs

Place alternate layers of bread and bananas in four 1 1/4 cup/315 mL/I0 fl oz capacity ramekins. Set aside. 2. Place 1/4 cup/60 g/2 oz sugar, cinnamon, milk and eggs in a bowl and whisk to combine. Pour over bread and bananas in ramekins and place in a baking dish with enough water to come halfway up the sides of the ramekins. Sprinkle tops of puddings with extra sugar and bake for 20- 25 minutes or until puddings are firm. Serves 4
