CHEESE SAUCE

Ingredients: 1 cup (250 ml) skim milk pinch ground nutmeg 1 tablespoon corn flour blended with 2 tablespoons skim milk 1 tablespoon grated Parmesan cheese freshly ground black pepper

Instructions
Use this cheese sauce when making cauliflower cheese or lasagne. (Makes 1 cup 250 ml). Mixing Procedure: 1. Bring milk and nutmeg to boil. Whisk in corn flour mixture and simmer for 10 minutes, stirring constantly. 2. Stir in cheese and cook a further 2 minutes. Season to taste with pepper 61 kilo joules (14 calories) per serve Low Fat 0.3 g Low Cholesterol 0 mg Low Fibre 0 g Low Sodium 23 mg MICROWAVE IT To make Cheese Sauce, place milk and nutmeg in a microwave-safe jug, whisk in corn flour mixture. Cook on high (100%) for 2 minutes or until sauce thickens. Stir in cheese and season to taste with pepper.
