FRESH TOMATO AND BASIL SAUCE
Ingredients
1 tablespoon olive oil
1 large onion, sliced
1 clove garlic, crushed
6 large tomatoes, peeled and diced
½ cup (125 ml) tomato juice (no added salt)
2 tablespoons chopped fresh basil
Freshly ground black pepper
Instructions
Fresh tomato sauces are great with vegetables, chicken, fish or lean meats.
Makes 2 cups (500 ml)
1. Heat oil in a saucepan. Cook onion and garlic for 4-5 minutes or until onion softens. Stir in tomatoes and tomato juice and simmer for 5 minutes.
2. Add 1 tablespoon basil and simmer for a further 1 hour or until sauce thickens and reduces. Just before serving, stir in remaining basil and season with pepper.
