APPLE AND HERB DRESSING
Ingredients
Ingredients:
1 cup (250 ml) unsweetened apple juice
3 tablespoons apple cider vinegar
1 clove garlic, crushed
1 tablespoon finely chopped chives
2 tablespoons finely chopped fresh parsley
Freshly ground black pepper
Instructions
Use this dressing as an alternative to the traditional French dressing or try it as a tasty dressing for rice salad. Makes 1 1/2 cups (375 ml)
Mixing Procedure:
Place apple juice, vinegar, garlic, chives and parsley in a screw top jar. Season to taste with pepper. Shake well to combine.

COOK'S TIP
If kept in an airtight container in the refrigerator, Mock Sour Cream will keep for two to three days. You may add a little more vinegar if you prefer a more sour taste.
