APRICOT ALMOND DELIGHT
Ingredients
Ingredients:
250 g dried apricots
1 tablespoon gelatine, dissolved in 4 tablespoons hot water
1 cup (250 ml) evaporated skim milk
3 tablespoons caster sugar
1 teaspoon almond essence
1 tablespoon finely chopped toasted almonds
Instructions
The delicate flavour and interesting texture of juicy apricots and toasted almonds complement each other beautifully in this light and fluffy dessert - perfect after any main course.
Serves 4
Mixing procedure:
1. Place apricots in a bowl, pour in sufficient water to cover and leave to soak overnight.
2. Drain apricots and place in a food processor or blender with gelatine mixture, skim milk, sugar and almond essence. Process until smooth. Pour into individual glasses. Refrigerate until firm. To serve sprinkle with almonds.
